Let them Marinade in for 2 - 48 hours. The longer, the tastier. While they Marinade, go ahead and make your Tzatziki (recipe on my profile). If you don't plan on making Tzatziki from scratch, then you can ignore this step. After marinading, Preheat your BBQ to medium heat (about 375°F). Ingredients

 2 people
  1. 5 boneless skinless chicken thighs
  2. 1 tablespoon paprika
  3. 1/2 tablespoon dried parsley
  4. 1/2 tablespoon jerk seasoning + 1/2 tsp
  5. 2 teaspoons onion powder
  6. 2 teaspoons garlic powder
  7. 2 tablespoon brown sugar
  8. 1 teaspoon black pepper
  9. 1 teaspoon salt
  10. 1 teaspoon cinnamon
  11. 1/2 teaspoon dried cloves
  12. 1/2 teaspoon red chili flakes (opt)
  13. 2 cups prepared rice cold
  14. 1/4 Cup diced red pepper
  15. 1/4 cup diced white onion
  16. 1/4 cup green onion plus extra for garnish
  17. 2 tablespoons minced garlic
  18. 1 tablespoon minced ginger
  19. 1/2 cup chopped pineapple plus extra for garnish
  20. Few dashes soy sauce
  21. Few dashes rice wine vinegar
  22. Sweet Thai chili sauce for garnish
  23. Olive oil

Steps

  1. Preheat pan. Mixed together all spices and brown sugar to create your spice mix.

  2. Add olive oil to spice mix to create a paste

  3. Cover chicken with paste to cover on all sides

  4. Add olive oil and sear over medium high heat for 5 to 6 minutes on each side. Your chicken will get a little dark because there is sugar in the spice mix. Don’t worry it has tons of flavor

  5. Sauté red peppers and white onions and olive oil. Add garlic and minced ginger.

  6. Add your cold rice and green onions to pan.

  7. Chop up one chicken thigh and add it to your rice mix. Season with rice wine vinegar soy sauce and additional jerk seasoning.

  8. Create a well in the center of your rice and add an egg. Scramble egg in the well and then incorporate into the rice mixture. Add pineapple.

  9. Plate your rice. Top with additional chicken thighs and garnish with Thai chili sauce pineapple chunks and chopped green onions. Enjoy!
