
Pineapple fried rice & jerk chicken
Ingredients
- 5 boneless skinless chicken thighs
- 1 tablespoon paprika
- 1/2 tablespoon dried parsley
- 1/2 tablespoon jerk seasoning + 1/2 tsp
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 tablespoon brown sugar
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon dried cloves
- 1/2 teaspoon red chili flakes (opt)
- 2 cups prepared rice cold
- 1/4 Cup diced red pepper
- 1/4 cup diced white onion
- 1/4 cup green onion plus extra for garnish
- 2 tablespoons minced garlic
- 1 tablespoon minced ginger
- 1/2 cup chopped pineapple plus extra for garnish
- Few dashes soy sauce
- Few dashes rice wine vinegar
- Sweet Thai chili sauce for garnish
- Olive oil
Steps
Preheat pan. Mixed together all spices and brown sugar to create your spice mix.
Add olive oil to spice mix to create a paste
Cover chicken with paste to cover on all sides
Add olive oil and sear over medium high heat for 5 to 6 minutes on each side. Your chicken will get a little dark because there is sugar in the spice mix. Don’t worry it has tons of flavor
Sauté red peppers and white onions and olive oil. Add garlic and minced ginger.
Add your cold rice and green onions to pan.
Chop up one chicken thigh and add it to your rice mix. Season with rice wine vinegar soy sauce and additional jerk seasoning.
Create a well in the center of your rice and add an egg. Scramble egg in the well and then incorporate into the rice mixture. Add pineapple.
Plate your rice. Top with additional chicken thighs and garnish with Thai chili sauce pineapple chunks and chopped green onions. Enjoy!
