  Grilled Chicken Gyros with Greek Air Fried Potatoes Ingredients   4+ 2-4  Chicken Breast Iceberg Lettuce Tzatziki Sauce (I'm using my homemade recipe) 1  Medium Red Onion 1  Medium Tomato 1  Green Bell Pepper Feta Cheese Mozerella Cheese Salt Black Pepper Garlic Powder Olive Oil Cooking Spray 2-4  Russet Potatoes Dried Oregano Greek Marinade 1  Medium Lemon Steps Place your chicken breasts into a zip lock bag or bowl and pour 3/4 of your Marinade onto them. Let them Marinade in for 2 - 48 hours. The longer, the tastier. While they Marinade, go ahead and make your Tzatziki (recipe on my profile). Chicken Spinach Mozzarella


Ingredients

 2 servings
  1. 10 oz chicken breast
  2. 1 Tbsp vegetable oil
  3. 1 tsp paprika
  4. 1/2 tsp kosher salt
  5. 1/2 tsp freshly cracked black pepper
  6. 10 oz frozen, chopped spinach
  7. 1 Tbsp olive oil
  8. 1 shallot, chopped
  9. 1/2 tsp kosher salt
  10. 1/2 tsp freshly cracked black pepper
  11. 1 tsp curry powder
  12. 1/2 tsp grated nutmeg
  13. 1/4 c milk and/or your favorite stock
  14. 6 oz mozzarella
  15. 2 hard-boiled eggs

Steps

  1. Add 1 tablespoon olive oil to a saucepan and bring to medium heat.

  2. Add shallots to the pan and stir occasionally.

  3. Reduce heat to low and add frozen spinach. Add 1 tablespoon vegetable oil to an oven-safe pan and bring to medium heat.

  4. Add seasoned, chopped chicken to the pan. Occasionally stir spinach.

  5. Turn chicken. Stir spinach.

  6. Turn on the broiler in the oven. Make sure the baking rack is in the upper half. Check chicken and set aside if done.

  7. Add milk and/or stock to the spinach and finish by seasoning and tasting it.

  8. Spread the cooked spinach around the oven-safe pan. Place the chicken and hard-boiled eggs on top. Add the mozzarella and stick it under the broiler.

  9. Remove the pan from the oven and serve. Actually, look at it first and be proud of yourself for what you just created.
