Let them Marinade in for 2 - 48 hours. The longer, the tastier. While they Marinade, go ahead and make your Tzatziki (recipe on my profile). Chicken Tostadas



Ingredients

 4 people (2 each)
  1. 1 whole rotisserie chicken shredded
  2. 8 corn tortillas
  3. 2 cups Mexican shredded cheese
  4. 2 avocados ripe
  5. 1 small tomato diced
  6. 1/4 red onion diced
  7. 1/4 cup cilantro dice
  8. 1 jalapeño pepper diced
  9. 1 half cups sour cream
  10. Chipotle in adobo sauce or chipotle powder
  11. 1/4 cup cojita cheese
  12. 1 tablespoon chili powder
  13. 1/2 teaspoon onion powder
  14. 1/2 teaspoon garlic powder
  15. 2 teaspoons Goya all-purpose seasoning
  16. 1 teaspoon dried chives
  17. Olive oil for sautéing and frying
  18. Salt and pepper
  19. Juice of one lime
  20. 1/2 cup chopped fresh spinach

Steps

  1. Add olive oil to pan over medium heat. Add chicken and seasoned with chili powder salt and pepper all purpose seasoning. Add onion and garlic powder. Sauté an additional minute then remove from heat.

  2. Add olive oil to coat bottom of pan. Add corn tortillas. Flip tortillas and season fried side with chili powder. Flip again and season the other side with chili powder.

  3. Once tortillas are crispy add chicken to the top. Add mixed cheese. Remove when cheese is melted.

     

    You can add a few splashes of water to pan and cover with lid to melt cheese faster.

  4. Combine avocado tomato onion jalapeño and cilantro. Add salt pepper and lime juice and mash thoroughly to create your guacamole.

  5. Mix one tablespoon of adobo sauce or 1 teaspoon of chipotle powder to sour cream.

  6. Top tostadas with guacamole, spinach, chipotle cream and garnish with Cojita cheese.
