Cilantro & Lime Chicken Bowl
Ingredients
- Single box of Cilantro & Like Rice-A-Roni OR make an extra 1-1.5 cups of regular white rice, brown rice, and add seasoning yourself. (I do it this way for flavor)
- Boneless chicken breasts (large 3)
- Regular white rice
- 1 Avocado
- 1 Roma tomato large
- 1 can black beans
- 1 lime
- Chopped cilantro (optional)
- salt
- pepper
Steps
Chop the chicken into strips and put in a greased glass baking dish (9x13).
Cook at 400 degrees while you cook the rice. 20-25 minutesCook rice per the directions on the box. When you have about 5 minutes left, open beans, drain and add to rice.
Separately heat and cook 1.5-2 cups of regular white rice. Have ready and hot to add to the boxed cilantro/lime rice.
When chicken is done, cut into small pieces.
Combine both of the rice together.
Dice tomato and avocado.
Cut lime into slices.
Chop cilantro to top.Let individuals make their own bowls:
Add a scoop of rice, handful of chicken, and top with diced tomato and avocado pieces.
Throw some salt, pepper, and cilantro on top, squeeze lime over bowl.
